Birria is a meat stew made from beef marinated in an adobo made of vinegar, dried chiles, garlic, and herbs and spices (including cumin, bay leaves, thyme, etc) before being cooked in a broth or consomé.
With our roots being in Jalisco, Mexico (the birthplace of birria), Calaveras has always featured Birria on its menu since October 2014 !
And with the Birria Craze having gained significant traction in the USA circa 2018-2020, we were one of the first adopters to the RED TACO craze as of January 2020 !
And on December 2023, we took our commitment to another level and launched an entire menu section centered around signature Birria Dishes !
